paleo “frozen” dinner

This is seriously the easiest thing to make…and takes little to no time to prepare…that’s why I call it the Paleo “Frozen” Dinner.

I made this soup at least once a week while I was on my 21DSD and it’s so delicious! It’s great for those wintery days and perfect for the end of the week, because you just throw all the leftovers in the fridge in the pot! Aside from making the bone broth, this takes no more than 30 min to make.

So here it goes…

Ingredients:

4 C Mineral Rich Bone Broth (I have yet to come up with my own recipe for bone broth but this is a really good one, I usually use my chicken broth since I use chicken in my soup)

1 C Meat (I usually use chicken, but beef can easily be used)

2-3 Large carrots, sliced

1-2 Celery Stalks, sliced

1 onion, chopped

2 small potatoes, peeled and chopped (optional)

any other veggies you want to add (Broccoli, Cauliflower, Radishes, Zucchini, Mushrooms, whatever you need to use up, etc.)

Your favorite dried/fresh herbs (I am on a dill kick right now, so that is what I use. However, thyme, rosemary, sage, marjoram would also work great. It’s really up to you!)

salt and pepper to taste

Directions:

1. Sauté the soup trip (carrots, celery, and onion) until onion is clear in butter or olive oil and the herbs of choice.

2. Add the bone broth and bring to a boil (You may need to add more bone broth or water depending on how many veggies you are adding).

3. Add the meat and the potatoes (if you are adding those) and any other veggies you have chosen and boil until veggies are tender.

4. Salt and Pepper to taste.

5. Serve! (I put a dollop of Sour Cream or creme de fraiche in my soup, makes it creamy!)
