alright, I’m on a soup kick these days…but it’s that time of year!! I’m not a huge chili fan, but once in a while it just sounds so good! On the Paleo diet legumes aren’t permitted so traditional chili isn’t an option. I came up with my own recipe! Here it goes!
Ingredients:
1 lb grass-fed ground beef
1 onion, chopped
3 celery sticks, chopped (optional)
4 cloves of garlic, minced
15 oz can of organic diced tomatoes (make sure tomatoes is the only ingredient!) of you can dice up you own tomatoes
1 red, yellow, or orange bell pepper, diced
2 potatoes, peeled and chopped (optional if white potatoes aren’t in your diet)
1/2-1 head of cauliflower, chopped
chili powder to taste
cumin to taste
Cheyenne powder to taste
salt and pepper to taste
directions:
1. In a big soup pot, heat butter or olive oil on med-high heat and sauté the onions, bell pepper, garlic, and celery until onions are clear.
2. Add the grass-fed ground beef, and salt and pepper. Cook until beef is done.
3. Add the diced tomatoes and bone broth, bring to a boil.
4. Once boiling, add the cauliflower and potatoes (if adding) and reduce to low and simmer until tender.
5. Add all the spices to taste.
6. Serve!
I grate up some raw cheddar cheese and top my Chili with that!
