fermented beets

In light of my post about eating fermented foods, I thought I’d share a ferment that I did. It’s pretty good if you enjoy beets, and a sweet thing to add to a meal.

3 large beets
2 large carrots
Orange peel
Ginger
Salt

754acdd0f2df2232bc3306886ffef3df1. Wrap beets in foil and bake at 300-350 degrees until soft

2. Slice beets and carrots into circles (or desired shape)

3. Toss the veggies with ginger and peel and place in mason jar

4. Cover completely with salt water (use about 2 teaspoons sea salt), use a ziplock bag to hold them down, make sure there is a dish to catch spill-over.

5. ferment in a dark, warm place for 5-7 days.
