blta salad

Nothing like a good BLT(A) to really satisfy your soul. Being gluten-free/grain-free means good BLTAs are hard to come by; nothing holds up like wheat bread with this food for the soul. So rather than find a “replacement” for the bread, just do away with it-you still get all the richness but without the blood sugar spike! Hope you enjoy this BLTA Salad.

Ingredients list:

 

                                                             1/2 lb organic spinach

2 pastured eggs, hard-boiled

4 strips of thick sliced bacon

1 large avocado (diced)

1 organic tomato (diced)

1 shallot (thinly sliced)

3 Tbsp red wine vinegar

1/2 tsp raw honey

1/2-1 tsp Dijon mustard

 

Directions:

  1. In a small saucepan, cover the eggs in cold water and bring to boil. Cook for 10 min. Set aside to cool. Once cooled, slice into 5-6 pieces.
  2. While eggs are cooking, fry the bacon until crispy over medium heat. Place on paper towel to drain. Reserve the bacon fat for dressing.
  3. In a salad bowl toss the spinach, avocado, tomato and shallot together.
  4. Crumble bacon and eggs over the spinach mixture.
  5. Drizzle dressing around the edge of the bowl, and toss salad to coat entirely. Enjoy!

For the dressing:

  1. Whisk together the reserved bacon grease, red wine vinegar, honey and mustard.
  2. Heat until all ingredients are incorporated.

Makes 2 main dish servings, or 4 side dish servings.
