There are at least three things I love about soup. 1) Quick & easy, one pot meal (also read as little clean up after dinner!!) 2) Inexpensive meals for days and 3) how comforting they are, especially on a fall or winter evening. This soup is no exception. I was craving fajitas, but also wanted soup. This soup was a perfect combination of the two. This version has corn (I had some in my freezer) but can easily be left out without compromising the flavor for those who are sensitive to corn. Hope you enjoy it 🙂
