I love cucumbers. They are probably my favorite vegetable. They are so crisp and refreshing right off the vine. Even store-bought cucumbers are delicious. I could eat them all day long. This year I didn’t think I would get any cucumbers, because one of the girls got out and ate them. Here she is. Naughty Chicken.
Fortunately, she didn’t uproot the plant, and they kept growing. I guess the cucumbers are chicken proof now…
This year has been crazy hot here in the PNW. Record highs, over and over and OVER again. Perfect weather for cucumbers. So, I have cucumbers coming out my ear, It’s not really a fair trade, but I get about 3 of these a day for enduring the high 90’s with no AC.
I’m not complaining about the cucumbers, but my hubby might be getting sick of this salad. Because I have tomatoes coming out my ears too. Here’s an Amish variety, and a cherry variety. Both heirloom. Both rouge wild.
This salad I made entirely from my backyard veggies (love when that happens!) and make it almost everyday. It’s delicious, refreshing and SO SIMPLE. It’s not very expensive to make either, considering how filling it is. It is inspired by both Bruschetta and Caprese Salad. This pairs great with grilled meat. Don’t ask me how I know, but it doesn’t pair well with chorizo egg casserole (Okay, it was leftover night!!!). Hope you enjoy the salad as much as I do!
