I know, I know. It’s not anything like real Italian food, and it can be overpriced for what you get. But I don’t care. I love it. And I’m not ashamed.
This soup is inspired by Olive Garden’s Zuppa Tuscano soup. A creamy and satisfying soul food.
I’ve made this soup with both kale and spinach. Kale is a bit sturdier and saves better than the spinach, but the spinach tastes great too. It just has a tendency to get slimy when you reheat it. So if you plan on saving it, I suggest you use kale. Enjoy!
