Morning Burst Smoothie

I’m on a total smoothie kick right now. It’s warming up here in the PNW and that usually means I loose my appetite and only want to eat mango. 

One day, I wanted mango so badly I went to Safeway. They didn’t have any. So I bought a naked juice with mango in it. That didn’t hit the spot, so I went to another Safeway and bought 3 mangos. No, I’m not pregnant. The sunshine does weird things to me. 

Not only is it warming up, but my schedule is getting crazy. So I usually end up making my smoothie around 8 am, after I’ve been up and at it for a few hours and drinking it in the shower. TMI? Oh well. 

Took me a while to find a smoothie that would taste delicious and satiate me for at least 4 hours. But I *think* I found one. The key is to not put vegetables in it – who knew?! I sorta gave up trying to make a tasty green smoothie because honestly, who wants to drink that crap? I’ll just eat more veggies at lunch and pack this smoothie full of MCTs and protein. It’s not a low sugar/low carb meal, but when you walk 6 miles a day you can spare it. 😉

Here are the ingredients I use in it, if you’d like to stalk up: 

MCT oil (Medium Chain Triglicerids) is helpful with energy and metabolism. MCTs are found most readily in coconut oil. The MCT oil is isolated and put in liquid form so it’s super easy to use. If you’re against using an isolated fat, or don’t want to pay for it you can easily use coconut oil. I personally don’t like coconut oil and it gives me an itchy throat – so I avoid it. One thing with MCT oil is to start out slow. If you added the full 3 Tablespoons, you’ll probably end up in the bathroom for a while. Start off with 1/2 Tablespoon and work your way up slowly to the full 2 Tablespoons. 

If you are vegetarian, you can certainly use a whey protein but it would no longer be dairy free. If you’re vegan…I’m not sure what to use. Hemp maybe? Let me know.
