As many of you know, I lived down in LA for a little over 4 years. There’s not too much I miss about it there, but the abundance of fresh Mexican food is definitely one of them. “Mexican” restaurants down in LA are like coffee shops in Seattle. They’re EVEYWHERE! Plus, I married into a Mexican family (Thank you Jesus!). Needless to say, Mexican food has, and always will be, close to my heart. So here’s my stab at creating a fresh, easy, fish taco. Hope you enjoy!
Ingredients:
for taco filling:
8oz wild caught mahi mahi
1 large roma tomato, diced
1/2 medium red onion, diced
1/2 red bell pepper, diced
1 jalapeño, minced
4 garlic cloves, minced
juice of 1 lime and 1 lemon
1/4 C olive oil
1 handful of cilantro, minced
salt and pepper to taste (around 1 tsp of each)
for toppings:
shredded red cabbage
sliced avocado
directions:
1. In a large bowl, combine the diced tomato, diced onions, diced bell pepper, minced garlic and jalapeño, lemon and lime juice, cilantro, and olive oil. Toss them all to together and salt and pepper to your desired taste. You may need to add more lemon juice, up to you!
2. While the veggies are marinating together, pat dry the filets of mahi mahi. Salt and pepper.
3. Heat large cast iron skillet to medium heat with some butter or coconut oil. Grill the fillets until done (about 5 min on each side, depending on size). You can also grill them on the BBQ in the summer time! 🙂
4. Toss the fish into the veggie mixture and flake the fish. Toss it all together. (The heat of the fish really brings out the flavor of the veggie mixture without actually cooking anything, which is an added bonus!)
5. Spoon the mixture over your favorite tortillas or just over a leaf of romaine.Top with shredded red cabbage, avocado and a little more lime and cilantro.
***We used corn tortillas (I know, not Paleo/Primal, but here’s a good article about corn tortillas if you’re interested) also here is a recipe for some Paleo tortillas (I haven’t actually tried them, but she’s a great resource!)
*these are great for lunch the next day, I didn’t even heat up the fish and they were still delicious!!
