Day 3 of 21DSD: round 2. Headaches are back…presumably from my lack of caffeine (not a huge fan of the coconut cream in my coffee…and i just don’t enjoy my morning joe without some cream…so just been drinking half a cup). My daughter also has not been sleeping during the days, and still waking up 4-5 times a night…so me being tired and on edge is only heightened by the detox. But it is much easier this time around. Hardest part is still thinking about “sugar.” Dang it sure has a hold on me. I’m really missing dairy! Today for breakfast I made some “noatmeal.” It was pretty good. Completely grain-free, dairy-free, and egg-free, a great alternative to egg dishes! Here’s the recipe.
ingredients (2 servings):
3/4 C raw nuts, soaked over night (I used 1/4 C raw walnuts, 1/4 C raw pecans. and 1/4 C raw cashews)
1/4 C unsweetened shredded coconut or coconut flakes
Full-fat coconut cream (I used canned) or coconut milk
Nutmeg and Cinnamon to taste (I used about 1/8 t of each)
directions:
1. Soak nuts in filtered water with about a teaspoon of salt overnight (about 10 hours). Change the water one time.
2. Drain nuts in the morning and put in the food processor until it’s a similar texture as rolled oats (about 10-15 seconds).
3. put the nuts and coconut in a small sauce pan, with the cinnamon and nutmeg, then add as much coconut cream/milk as desired. I don’t like mine too runny so i didn’t add much (probably 1/4 C).
4. Heat over medium heat.
5. Serve with green apples, bananas, or drizzle some grade B maple syrup (when not on detox). Great for a cold winter morning!
